1-Minute Almond Cinnamon Muffin Recipe
You’ll need:
- A cup
- 1 egg
- 1/4 cup Almond flour, which is about 25g by weight (sometimes called almond meal or ground almonds)
- 2 teaspoons cinnamon (or other flavoring if you prefer)
- 1 teaspoon baking powder
- 1 teaspoon coconut oil
- 2 packets or 2 teaspoons Stevia. I use Truvia or Tesco brand granulated stevia.

Simply put everything in a cup and mix well. Bang it in the microwave for 80 seconds (yep I lied when I said 1 minute) and you’re all set!

@Aidan. No idea, not long though. Watch the cup. When the mixture rises over the top of the cup it’s done.

Where firstly is the cheapest place to buy almond flour in the UK and secondly the easiest place to find it? Can’t find it in Tescos.

@Matt. Tesco do have it. It’s called Ground Almonds. Ask one of the staff, it’s def there.
Mark muffins look great. One question about the coconut oil the KTC coconut oil seems very cheap it says pure but not virgin how can you tell if it’s not non-hydrogenated?
