I didn&#039;t whisk the egg too much so it stayed pretty firm, then topped it with tomato, spinach, peppers, cheese, then put it under the oven a couple minutes to get the cheese nice and crispy (an oven-space frying pan is VERY useful).  I then cut it in wedges and enjoy!  Okay, it&#039;s not totally crispy like a pizza crust, and I guess it&#039;s more like a fritatta, but it&#039;s really yummy and super high protein.  =)]]></description>
